Happy Thanksgiving!!!
Thanksgiving day we spent lunchtime with the Potts and Payne families. It was fantastic! The food was absolutely incredible!!! After leaving their beautiful home, we went and got some redbox movies and headed home for some snuggle time. ZZ and Daddy napped while Rocco and I watched movies. Once our movies were over, Rocco and I made Thanksgiving dinner! Then woke up Daddy to join us as we ate and then watched another movie. Such a fun, lazy, relaxing day...
Wanna know how I did my Turkey? It turned out tasting Divine!
I brined it overnight in a Lemon, Rosemary, Garlic and Slat brine. Then I rinsed the bird and patted it dry. I stuck my hand up through the back where there is a skin flap and I separated the skin from the meat. Then I covered that whole new area in a rosemary lemon butter. After that I took a meat injector and injected Apple juice concentrate through the cavity of the bird into it's meaty areas. Then I brushed the outer skin of the bird with olive oil and salted it, placed it in the oven and baked it.... HEAVEN IN MY MOUTH! Rocco even LOVED it! The lemon brine had made it so the meat got flavor throughout and stayed moist. The Apple juice gave it a slightly sweet flavor, while the rosemary butter sunk in to give it an herby flavor. I can't describe to you just how great it was, but I can tell you that I was and am really excited with how great it turned out and if there was some turkey cooking contest that day I totally would've won! lol. seriously though...

The day after thanskgiving we ate straight-up leftovers. The day after that we at Turkey Bhan Mi sandwiches! Oh my gosh! It was better than eating a rainbow! So Yummy! If you want to try something that sounds disgusting but will blow your mind with it's deliciousness, this is the thing for you. although I think it'll be better if you use chicken instead of turkey. But even with turkey it was incredible! Let me describe: Hoagie or Bagguette bread, Chicken or Turkey, Cilantro, cucumbers, pickled carrots and pickled daikon; all topped with spicy mayo! Better than you can imagine. I will share my recipes on another day in another post and you will be so happy if you try it :)
Then on the third day after Thanksgiving, we had a picnic on our backporch. ZZ had a turkey Ceasar salad, Seth had a Turkey Club Sandwich, I had a Turkey Bhan Mi sandwich, and Rocco had a PB sandwich. So fun! So yummy!
And then our leftovers were gone... :(
So sad. I guess that means I need to make another turkey! So happy... :)
